摘要
荷藕是一種多孔質(zhì)蔬菜,水分多,淀粉含量高,形狀又不規(guī)則,其肉質(zhì)即嫩又脆,因而給其裝夾、機械化切片作業(yè)帶來了一定困難,論文針對我國荷藕機械化切片技術(shù)落后,主要停留在人工切片這一現(xiàn)狀,進(jìn)行了荷藕物料特性的研究,
在分析了國內(nèi)外食品切片加工技術(shù)基礎(chǔ)上,結(jié)合其物料特性,設(shè)計了一種新型蓮
藕切片機,并對該機進(jìn)行性能試驗及優(yōu)化。
本文對于荷藕的幾何形狀和尺寸進(jìn)行統(tǒng)計和分析,包括荷藕節(jié)長和節(jié)徑的分布范圍,藕節(jié)不同部位的節(jié)徑差值大小,以及對藕片的粘性等的計算。同時還介紹了荷藕切片技術(shù)的研究現(xiàn)狀及存在的問題初步探討了曲柄滑塊式荷藕切片機的整體結(jié)構(gòu)對荷藕切片中存在的物料夾持問題粘刀問題和藕片破碎問題提出相應(yīng)的解決措施。

Lotus root being sticked on the blade.In allusion to the present condition of the low lotus root mechanization slice technique,mainly,staying around the artificial to cut into slices in our country, the lotus root material characteristic was investigated in this paper.And a new kind of lotus roots slice machine was designed at the foundation of analyzing the domestic and international food slice processing technology, combining its material characteristic, and the function of the machine was tested and optimized.
In this paper, for the lotus root geometry and size of the statistics and analysis, including lotus root length and diameter distribution of the scope of section track different parts of the margin size, as well as the viscosity, such as calculations.
